This soup is so easy. I pour equal parts vegetable broth and water into a pot and turn the heat up on high so it boils quicker. While the water heats up I cook the meat on a skillet until it's almost done. I also chop all the vegetables and wash the pearl barley. Once everything is prepped I just dump it all into the pot. You want to wait for the water to start boiling again and then reduce heat to simmer. Put a lid on top of the pot at an angle and let it cook for 1 hour.
