This is my go-to recipe for shepherds pie. It's quick to make and very filling.

Bring a large pot of water to a boil. Add the potatoes and cook for about 15 minutes. Drain and return them to the pot. While the potatoes are boiling heat some oil in a skillet and add the onions and garlic. Add the ground beef and cook until browned. Add the beef broth, ketchup, soy sauce, and curry powder and bring to a boil. Simmer for 3 minutes. Add the cornstarch, tomatoes, and mixed vegetables. Cook until the mixture thickens and season with salt and pepper. Pour the mixture into a casserole dish.
Preheat the oven on the broiler setting.
Add milk and butter to the potato mixture and whip until it is smooth. Spread over the meat mixture and sprinkle the top with cheese. Place the casserole dish in the oven for 3-5 minutes or until the cheese is melted as pictured above.
