Here's an easy recipe for wheat free thumbprint cookies! Accompanying photos below. :)
This dessert is great any time of the year and it's quick and easy to make!!! Change up the recipe by substituting different fruits. For this example I used raspberries and blueberries!
The custard has a nice combination of tartness and sweetness without being too sweet. Next time I'll try baking the custard without the fruit and add the fresh fruit to the top after it's been baked to give it a different touch.

Sugar Cookies aren't my favorite type of cookie to eat but I decided to make some the past week after seeing the amazing cookies one of the girls at work made for valentines day. She went all out. Unfortunately I am not as skilled of an icing decorator but I had fun making them. Here's the recipe with corresponding pics. =)
1 cup butter
1 1/2 cups sugar
1 teaspoon vanilla extract
3 3/4 cups whole wheat/all purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
Icing: *I didn't have cornstarch so I improvised
2 cups powdered sugar
1 tsp vanilla extract
2 tablespoon almond milk
*recipe makes about 3 dozen
Preheat oven 400 degrees F. Cream together the butter and sugar. Then add eggs and vanilla. Add the flour, baking powder and salt. Cover and chill dough for an hour.
Once the dough has been chilled take out of fridge and roll out about 1/4" thick. Cut into shapes. Place cookies on cookie sheet 1 inch apart.
Bake for 7 minutes. Cool completely before icing.
For icing just mix all the ingredients together in a bowl and have fun decorating.
